The trick is purely practical and the Italians have all this worked out as there doesn’t, why don’t we just treat the pasta as a type of food, but as part of their national culture.
The cooking is done with technique and give a special basis in the pasta and the sauce that comes with it.
One of the things that I do is to break the spaghetti because then they can’t be wrapped on the fork as it should, but also because in this way they avoid to get dirty with the sauce.
