quickly a shot of the beloved treat for millions of citizens throughout the world. But here lurks a toxic-carcinogenic trap.
The coffee made in a machine with capsules, contains multiple concentration of furan –a toxic, carcinogenic component – from the guy who make the simple coffee makers. The highest concentrations were found in the capsules of espresso.
The study done by experts at the University of Barcelona and published in the scientific journal “Journal Food Chemistry” and the site of the National Institute of Science and Technology of Spain.
“The chemical components produced by making coffee filter, they have absolutely nothing to do with what is produced from an espresso machine with capsule, as well as during the process there is a great difference in the release of furan”, explains the responsible of the study Javier Santos, professor in the department of Analytical Chemistry at the University of Barcelona.
The interest of scientists for the study of this component has increased in the last few years, as had been proven the toxicity and carcinogenic properties in animals, and also because the International Agency for Research on Cancer included in the list of foods that potentially cause ογκογενÎσεις.
The experts recorded the concentrations of furan in various types of coffee and found that:
*The coffee filter contains from 20 to 78 nanograms per millilitre (ng/ml)
*Instant coffee contains from 12 to 35 ng/ml
*The espresso simple machine from 43 to 146 ng/ml
*The espresso from a capsule contains 117 to 244ng/ml
“The elevated levels are due to the hermetically closed capsules, which prevent furan, which is highly volatile, it is released when the pressure and the hot water component enters in the drink,” explains Santos.
In fact, as he explains, “the longer the coffee is in the cup, the more it evaporates, the furan”.
Experts point out that in all of these cases are within the values considered safe for human health. To go beyond the maximum approved limits of the furan in coffee, you should consume at least 20 capsules of coffee a day or 200 instant coffees.
However, the furan is contained in various foods, from baby foods, juices, products in jars and cans not heated to be consumed and it is difficult to go beyond the safe limits. Indeed, the European Commission shall monitor and measure the substance in various foods in order to change the existing legislation.
In the same study showed that the concentration of furan is lower in coffee that has been roasted slowly at a low temperature, from him which is roasted at a high temperature and quickly.
Furan, like acrylamide, it belongs to the category of carcinogenic substances that occur when food or drink are exposed to a high temperature.
