Preparation of egg
The eggs that have been preserved in the fridge for a few days have a higher pH, so more chances to break in the cooking, but cleaned more easily. To avoid the cracking of the egg, you can also drill little in one round side before the boil, to release the air inside. This you can do it just with a needle. If, again, your eggs have not been refrigerated and are room temperature, you don’t have to worry about cracks.
You can boil more than one egg at the same time in a saucepan, as long as they have enough space between them. Besides, the trade will find and devices, which boil more than one egg at the same time. If, however, an egg is cracked at the time of the boiling, throwing a few drops of vinegar in the pot will avoid the leakage from the shell. Alternatively, you can boil an egg that has been cracked by wrapping it with aluminum foil.
To tell if an egg is broken or not, put it in a bowl of water. If the egg stands at the bottom of the container, then it is okay. If it floats, then it is broken.
Finally, remove the hot eggs carefully, using a slotted spoon and being careful not to burn yourself with the water.
