Diet for diabetes: The 8 vegetables with fewer carbohydrates

Diabetics have to watch very their diet and especially to avoid carbohydrates…
Because all fruits and vegetables contain carbohydrates, i.e. sugars, diabetics need to be careful even when choosing products which are considered to be generally healthy.
The following vegetables are rich in vitamins, minerals and fiber, but does contain a large amount of carbohydrates.
1. Spinach
Spinach provides folic acid, beta-carotene and vitamin K.
2. Tomato
The tomato is rich in vitamin C, vitamin A and potassium. It has very few calories, about 32 per cup. Also, the lycopene, which gives tomato its bright red colour, has strong antioxidant activity.
3. Broccoli
Broccoli is known mainly for its anticancer activity. It is a good source of vitamin A, vitamin C and vitamin K, dietary fiber, and iron.
4. Cucumber
One cup of cucumber provides less than 5 grams of carbohydrates. The cool vegetable is also good source of vitamin K, potassium and vitamin C.
5. Cabbage
Cabbage is one of the most popular vegetables for a salad. Provides vitamin K and vitamin C, fiber, manganese and vitamin B6.
6. Brussels Sprouts
Brussels sprouts have few calories but provide a significant amount of vitamin A, vitamin C, folic acid and fiber.
7. Cauliflower
Can the smell when boiling is not particularly attractive, but the cauliflower is a super-food with a unique nutritional value. It is rich in vitamin C, fiber, potassium and folic acid.
8. Asparagus
Asparagus provides only 27 calories and 5 grams of carbohydrates per cup. The nutritional value lies mainly in their content of vitamin K and vitamin A.
