Materials
For the cake
100gr. dark chocolate of good quality (55% cocoa)
3 eggs
180γÏ. sugar
170γÏ. all-purpose flour
1 tsp. teaspoon baking powder
1 tsp. sweet cinnamon
130γÏ. butter, cow’s milk, softened for 1 hour at room temperature + a little more for the form
For the caramelized apples
3 apples, large, peeled, cleaned from seeds and cut into cubes
1 tsp. tablespoons butter cow
2 tsp. tablespoons brown sugar
3 tsp. soup filet almond
1 tsp. sweet cinnamon
For the whipped cream (optional)
500ml cream 35% fat, thoroughly frozen in the fridge
30gr. powdered sugar
ΔιαδικασίαΕτοιμάζετε the caramelized apples: In a non-stick pan, heat the butter over medium-high heat and when foaming at the mouth and burn drop the cut apples. Saute them for 2-3 minutes, stirring carefully with a wooden spoon, until golden brown very gently.
Sprinkle with the brown sugar, add the almonds and continue to sauté for another 1-2 minutes, stirring until apples caramelize. Drain on absorbent kitchen paper and, when cool, sprinkle with cinnamon. Leave it in place but without the cover to keep soft.
Prepare the cake: Preheat the oven to 180°C. Grease slightly a round cake tin (or a griddle) with a diameter of 24 cm.
Rub half the amount κουβεÏτοÏÏας in the fat side of the Ï„Ïίφη and break the rest of the amount into small pieces. In a large bowl beat with mixer the eggs with the sugar, until you get a pale and sticky mixture.
Gradually, add the flour, the baking powder and the cinnamon, without stop beating, until combined the ingredients well. Add the softened butter and stir for a little while longer, until the mixture is homogeneous.
At the bottom of the form – or of the pan – lay the caramelized apples, spreading the pieces of κουβεÏτοÏÏας, and from the top pour the mixture of the cake. Sprinkle the entire surface with the ceramic κουβεÏτοÏÏας. Bake the cake in the oven for 40 minutes.
Allow to cool slightly, deforming and allow to cool completely, onto a wire rack.
Prepare the whipped cream: Beat in mixer the ice cream to firm slightly and it looks like thick yogurt. Add the powdered sugar and continue beating, until they formed tight peaks. Cut the cake into pieces and, if you want, accompany it with 1-2 tsp. tablespoons of whipped cream.
