Processed carbohydrates, like white bread and sugar, are absorbed faster by the body, increasing sharply the level of glucose in the blood. After a while, decrease equally sharply glucose levels, so we feel that depleted the available reserves of our body into energy.
On the contrary, the carbohydrates present in whole grain products and legumes release sugars into the blood at a slower and constant rate, and thus glucose levels do not fluctuate sharply. This means that the feeling of satiety lasts for longer and does not feel sudden exhaustion.
When we consume a lot of carbohydrates, in particular if the increased consumption is not accompanied by exercise, the excess amount of the nutrient is stored as fat to be used as a future source of energy when the body will need it.
What you may not know is that our body is processing much more efficiently carbohydrates immediately after the workout –so this is the ideal time of the day to enjoy the meal with the largest carbohydrate content.
