Tabbouleh with couscous…
Ingredients
250gr. couscous
8 tbsp. olive oil
250ml of boiling water or vegetable broth
2-3 fresh onions finely chopped
½ Bunch of parsley
10 mint leaves
1 tomato big chopped or 12-15 cherry tomatoes cut in four
1 lemon (the juice of)
salt
pepper
Process recipe
In a large bowl (to withstand high temperatures, glass preferably), add the couscous, the olive oil and the boiling water or broth salt. Optionally, add the water, garlic powder, sweet paprika, turmeric, etc. to the perfume. Cover the bowl with a plate and leave the couscous to pull the liquid for 10-15 minutes.
Finely chop the onions, herbs and cherry tomatoes. Add the lemon juice. Mix well.
Serve with additional fresh leaves of mint.Source
