Pasta with caramelized pumpkin, smoked cheese and hazelnuts

Materials
500gr. pasta “celery” (rigatoni)
2 onions, thinly sliced
300g. pumpkin grated
5-6 sprigs of thyme
1½ tsp. tablespoons brown sugar
200gr. cream cheese
150gr. smoked cheese, in small cubes
100gr. hazelnuts toasted and coarsely chopped
Process
Step 1
Cook the pasta according to the instructions on the packaging. Keep a little of the pasta water, strain, cold, with plenty of water, pour a little olive oil and keep aside.
Step 2
Heat in a pan 5-6 tsp. tablespoons olive oil, add the onion, the pumpkin and saute very well in medium heat for 8-10 minutes, until wilted very well.
Step 3
Then add salt and pepper, sprinkle the brown sugar, add the thyme and continue to sauté for another 3-4 minutes on high heat to caramelize.
Step 4
Add a little of the water they boiled the pasta, add the cream cheese and stir until melted and sauce thickens. Add then the pasta, hazelnuts, and if I need a little more of the water you kept. Stir very well.
Step 5
Serve the pasta immediately, sprinkled with smoked cheese.
