Inspired by both American cobblers and European-style puddings, it’s essentially fresh or frozen fruit topped with a fragrant, cake-like batter that bakes directly over the fruit. As it cooks, the fruit juices bubble up and gently soak into the batter, creating a tender, moist texture with deep, natural sweetness.

Why It Works

This method was originally developed to make the most of soft or overly ripe fruit — no peeling, pitting, or elaborate prep required. A touch of lemon zest and warm cinnamon are essential: they enhance the berries’ flavor without competing, so don’t skip them.

Wild Berry Pudding

For the fruit base:

  • 500 g mixed wild berries (fresh or frozen)
  • 80 g sugar
  • 20 g cornflour
  • Zest of 1 lemon
  • 1 vanilla pod (or 1 tsp vanilla extract)

For the cake batter:

  • 70 g melted butter
  • 170 g all-purpose flour
  • 160 g sugar
  • 1 tsp baking powder
  • A pinch of salt
  • 200 ml milk
  • 1 tsp ground cinnamon

Method

Preheat the oven to 180°C (conventional setting). In a heatproof baking dish, combine the wild berries, sugar, vanilla, lemon zest, and cornflour. Stir well until the fruit is evenly coated, then spread into an even layer.

In a large bowl, whisk together the melted butter, milk, and sugar. Add the flour, baking powder, salt, and cinnamon, and mix just until smooth and free of lumps.

Pour the batter gently over the fruit — don’t press it down; let it settle naturally. Bake for 40–45 minutes, or until the top is deeply golden and the fruit juices are bubbling around the edges.

Let the pudding rest for a few minutes after baking to set slightly. Serve warm — ideally with a scoop of vanilla ice cream or a dollop of cold whipped cream.
