For 4 people
1 pound of chestnuts
Half a cup of milk tea sweetened evaporated milk
1 tablespoon fresh butter
1 teaspoon salt
Carve crosswise the chestnuts and pour in the boiling water for five minutes. Clean them one at a time and simmer to melt then in a blender.
Add the milk and butter and stir over low heat for 2-3 minutes. Add the vanilla.
We pile up the mashed potatoes on a platter in the shape of a small hill and serve in glasses of ice cream or champagne.
